Holidaily Brewing Co., Little Dry Creek Brewery coming to DTC

Something is brewing at Denver Tech Center, as two beer makers prepare to open new facilities in the burgeoning district.

Holidaily Brewing Co., which specializes in gluten-free beers made with alternatives grains like millet and buckwheat, is planning to open its second taproom in the area, while newcomer Little Dry Creek Brewery is slated to open alongside the other food stalls at Troy Guard’s Grange Hall.

Both expect the beer to be flowing by later this summer — solid open dates are yet to be determined — when they’ll join other breweries in the area, including Spice Trade Brewing Co., Peak View Brewing Co. and Resolute Brewing Co. Here’s what we know.

Founder Karen Hertz opened Golden-based Holidaily Brewing Co. in 2016 after battling cancer twice and receiving a doctor’s recommendation to eliminate gluten from her diet. Since then, the business has grown enough to warrant a second location — sales so far in 2021 are up 45% compared to same period last year, Hertz said — this one in Greenwood Village.

The new taproom, located at 5370 Greenwood Plaza Blvd., will inhabit a 2,350-square-foot space near The Landmark theater and be outfitted with a two-barrel pilot system where brewers can experiment with new recipes. There will also be a dog-friendly patio.

Holidaily is awaiting licensure for the space, but otherwise has very little to do in the way of build out. The turnkey nature of the space was one of the things that attracted Hertz to it.

“We needed to get furniture and beer there. There’s already a bar set up, there’s a cool garage door,” she said. “Tap lines are already set up, which we obviously need to make sure are safe for our product before we set up.”

But that’s not the only allure. Hertz grew up three miles from Denver Tech Center, so though this is a new venture, it’s like a return to her roots.

“I get to take this crazy business I built and share it with people I grew up with,” Hertz said.

Drinkers can expect to find packaged offerings such as Favorite Blonde Ale, Great American Beer Festival gold medalist Boombastic Hazy IPA, a pumpkin beer and more on tap when the brewery opens.

Little Dry Creek Brewery

So named for a tributary of the South Platte River that provides water to the facility, Little Dry Creek Brewery will anchor a 13,000-square-foot food hall called Grange Hall (6575 Greenwood Plaza Blvd., Greenwood Village) that’s expected to open in September.

Guard, founder of TAG Restaurant Group, decided to jump in on the food hall trend after seeing them rise in popularity for the social atmosphere and variety of options they offer. Little Dry Creek Brewery will anchor the hall, which is fitting given the facility’s former life as a C.B. & Potts brewpub.

Head brewer Ty Nash, who previously worked C.B. & Potts and Dead Hippie Brewing, plans to start with a wide lineup of styles including an altbier, pilsner, wheat beer, brown ale and several India pale ales in hopes of appealing to equally varying palates.

“One of the unique aspects is the diversity of the restaurants in Grange Hall, and creating beer recipes that will complement each brand and reach a much wider demographic than most brewpubs,” Nash said in a statement.

Grange Hall’s nine food stalls so far include another location of Guard’s healthy-bowl restaurant, Bubu, the chef’s first pizza concept, an outpost of Wasabi Sushi, and counters featuring barbecue, ice cream, coffee and burgers. Crack Shack, a San Diego-based fried chicken concept, will also be opening its first Denver-area spot within Grange Hall.
